Ingredients
Brownies
- 1 box dark chocolate brownie mix (any brownie mix works)
- 1 large egg
- ⅓ cup whole milk
- ½ cup canola or vegetable oil
Buttercream Frosting
- 4 ounces white chocolate
- 2 tablespoons heavy cream
- ¾ cup unsalted butter, room temperature
- ½ teaspoon kosher salt
- 2-3 drops green food color
- 3 cups powdered sugar
Decorations
- ⅓ cup large green round pearl sprinkles
- 12 small pretzel sticks
- Skull and crossbone sprinkles
- Candy eyes
- Round purple and black sprinkles (optional)
Instructions
- Preheat the oven: Set your oven to 350 degrees Fahrenheit. Grease and flour a 12-hole muffin pan to ensure the brownies don’t stick, then set it aside.
- Combine brownie ingredients: In a large mixing bowl, mix together the dark chocolate brownie mix, egg, whole milk, and canola or vegetable oil until the batter is uniform.
- Fill muffin pan: Evenly scoop the brownie batter into the prepared muffin pan wells, filling each about three-quarters full.
- Bake brownies: Bake the brownie batter for 25 to 30 minutes, or until the tops start to crack, indicating they are cooked through.
- Cool brownies: Let the brownies cool in the pan for 10 minutes to set, then transfer them carefully to a wire rack to cool completely.
- Make white chocolate ganache: Place the white chocolate and heavy cream in a microwave-safe bowl and microwave on high for 45 seconds. Let it rest for 90 seconds, then stir until smooth. Allow the ganache to cool to room temperature.
- Prepare buttercream: In the bowl of a stand mixer fitted with a paddle attachment, beat the softened unsalted butter on medium speed for 1-2 minutes until smooth.
- Incorporate ganache: Scrape down the sides of the bowl then add the cooled white chocolate ganache and beat on medium speed for 4-5 minutes until well combined and smooth.
- Add powdered sugar and color: Add kosher salt, green food coloring drops, and powdered sugar to the buttercream. Mix on low speed until the sugar is fully incorporated, then increase to medium-high and beat for an additional 4-5 minutes until the frosting is light and fluffy.
- Frost the brownies: Using a large cookie scoop, place a generous amount of green buttercream on top of each cooled brownie.
- Add sprinkles to create bubbles: Sprinkle a generous amount of the large green round pearl sprinkles over the frosting to mimic bubbling witch’s brew.
- Insert pretzel sticks: Press one pretzel stick into each brownie through the frosting to serve as a whimsical mixing spoon.
- Decorate the brew: Finish decorating by adding skull and crossbones sprinkles, candy eyes, and optionally, round purple and black sprinkles for an extra spooky touch.
Notes
- Ensure brownies are completely cooled before frosting to prevent buttercream from melting.
- If you prefer a less sweet frosting, reduce powdered sugar slightly.
- The green food coloring amount can be adjusted to achieve your desired shade of green.
- Use large pearl sprinkles for a better bubble effect.
- Store brownies in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
