Chocolate and Gelatin Base

- 2 Tbsp cold water

- 1 ½ cups heavy cream, divided
- ½ tsp vanilla extract

- 2-4 Tbsp powdered sugar (optional)

Instructions
- Heat the Chocolate: Place the finely chopped white chocolate in a heatproof bowl and microwave for 30-45 seconds until softened slightly but not melted. Set aside.
- Heat Cream: In a small saucepan, heat ½ cup of heavy cream until just steaming but not boiling.
- Make Ganache Base: Pour the hot cream over the white chocolate to cover it completely, let it sit for 2-3 minutes to soften, then gently stir until smooth and glossy. Stir in vanilla extract and a pinch of salt. Allow the mixture to cool slightly.
- Bloom Gelatin: Sprinkle the powdered gelatin over 2 tablespoons of cold water and let it sit for 5 minutes to bloom, until thick and gel-like. Microwave for 10-15 seconds until melted, then stir the dissolved gelatin into the warm chocolate mixture until fully combined.
- Whip Remaining Cream: In a clean bowl, beat the remaining 1 cup of cold heavy cream with an electric mixer until medium-stiff peaks form. Add powdered sugar if desired for extra sweetness, and continue whipping.
- Fold Cream into Chocolate: Fold about one-third of the whipped cream into the cooled chocolate mixture gently to lighten it. Then fold in the remaining whipped cream in two additions, careful to keep the mixture smooth, light, and airy.
- Chill: Spoon the mousse into serving glasses or dishes and refrigerate for at least 4 hours, or until fully set.
- Serve: Before serving, garnish the mousse with fresh berries, whipped cream, and white or dark chocolate shavings for an elegant finish.
