This refreshing Watermelon Mocktail is a perfect beverage for hot days, combining fresh watermelon juice, zesty lime, and crisp mint, topped with bubbly seltzer for a light and invigorating drink. It’s easy to prepare in just 15 minutes and serves four, making it ideal for gatherings or a cooling personal treat.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Mocktail Ingredients

  • 6 cups seedless watermelon, cubed
  • 2 limes, juiced
  • 1 lime, cut into slices for garnish
  • 6 sprigs fresh mint
  • 12 ounces unflavored seltzer

Instructions

  1. Blend the watermelon and lime juice: Add the diced watermelon and freshly squeezed lime juice to a blender. Pulse to break up any large chunks, then blend on high until the mixture is smooth and fully liquefied.
  2. Strain the juice: Place a fine mesh strainer over a bowl. Pour the blended watermelon and lime juice through the strainer, using a wooden spoon to stir and press the pulp gently to extract as much liquid as possible, ensuring a smooth, pulp-free drink. This step can be skipped if you prefer more texture.
  3. Muddle the mint and combine: In a small pitcher, add 6-8 fresh mint leaves and gently muddle them about 3-4 times to release their flavor without tearing them. Pour the strained watermelon-lime juice into the pitcher with the mint. Refrigerate until chilled.
  4. Assemble the mocktail: Fill 12-ounce glasses halfway with ice. Pour the chilled watermelon mixture over the ice until each glass is approximately two-thirds full. Top off each glass with unflavored seltzer, then garnish with a fresh lime slice, a sprig of mint, and a straw for serving.

Notes

  • Straining the juice removes pulp and seeds for a smoother texture, but can be omitted if you prefer a thicker drink.
  • Adjust lime juice to taste for preferred tartness.
  • For extra chill, refrigerate the watermelon mixture for at least one hour before assembling.
  • Use fresh, seedless watermelon for the best flavor and easier preparation.
