These Veggie Spring Rolls are a fresh and vibrant appetizer featuring crisp red radish, cabbage, carrot, bell pepper, cucumber, and cilantro wrapped in delicate rice paper. Served with a creamy, tangy homemade peanut dipping sauce, they offer a perfect balance of crunchy textures and savory flavors, ideal for a light snack or party platter.

  • Total Time: 15 minutes
  • Yield: 12 servings

Ingredients

Vegetables

  • 1 bunch red radish (thinly sliced into rounds)
  • 12 lettuce leaves
  • ¼ head red cabbage (shredded)
  • 1 large carrot (cut into matchsticks)
  • 1 red bell pepper (thinly sliced)
  • 2 Persian cucumbers (thinly sliced lengthwise)
  • 1 bunch fresh cilantro
  • 12 8-inch rice paper wrappers

Peanut Dipping Sauce

  • ¼ cup creamy peanut butter
  • 2 Tablespoons orange juice
  • 1 Tablespoon unseasoned rice vinegar
  • 1 Tablespoon low sodium tamari
  • 1 Tablespoon maple syrup
  • 1 teaspoon grated fresh ginger
  • ¼ teaspoon crushed red pepper

Instructions

  1. Make Peanut Dipping Sauce: Add all sauce ingredients to a small bowl and whisk until smooth. If the sauce is too thick, slowly add 1-2 tablespoons of hot water, whisking to reach desired consistency. Adjust seasoning by adding more crushed red pepper or a splash of lime juice if desired.
  2. Prepare Vegetables: Thinly slice radishes into rounds. Shred or thinly slice red cabbage. Cut carrot into matchsticks. Thinly slice red bell pepper. Julienne cucumbers lengthwise. Wash and dry lettuce leaves and fresh cilantro thoroughly.
  3. Soften Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it softens and becomes translucent but not overly sticky. Remove and place on a flat surface for filling.
  4. Assemble Rolls: Arrange the filling on the lower half of the softened wrapper starting with a row of radish slices, then a lettuce leaf, followed by cabbage, carrots, bell pepper, cucumbers, and cilantro.
  5. Roll the Spring Rolls: Fold the bottom edge of the wrapper up over the filling, then fold in the sides. Continue rolling tightly like a burrito until sealed. The rice paper naturally sticks to itself, keeping the roll intact. Place finished rolls on a serving plate and cover with a damp towel to retain moisture.
  6. Store Rolls: If not serving immediately, cover the platter with plastic wrap and refrigerate.
  7. Serve: Pour the peanut dipping sauce into a small bowl and sprinkle with crushed peanuts and extra red pepper flakes if desired. Serve the rolls chilled or at room temperature alongside the dipping sauce.

Notes

  • Rice paper can tear easily; handle gently when soaking and rolling.
  • For added protein, consider adding tofu or cooked shrimp inside the rolls.
  • Serve immediately or keep covered with a damp towel to prevent drying out.
  • Adjust peanut sauce heat level by varying crushed red pepper quantity.
  • Vegetables can be customized based on preference or availability.
