Ingredients

  • 1 package vegan puff pastry dough
  • 1/3 cup vegan feta cheese, crumbled

Instructions

  1. Cook Spinach: In a large pot, bring water to a boil. Add the frozen spinach and cook until soft. Drain thoroughly and squeeze out any excess water to prevent sogginess in the filling.
  2. Sauté Onion and Garlic: Heat canola oil in a pan over medium heat. Add the diced onion and minced garlic, cooking until they become translucent and golden, about 5-7 minutes. Add a splash of water if the mixture browns too quickly to avoid burning.
  3. Combine Filling: Mix the drained spinach with the sautéed onion and garlic mixture. Season with 1/4 teaspoon salt and allow the mixture to cool before assembling.
  4. Preheat Oven: Set your oven to 350°F (180°C) to prepare for baking the pinwheels.
  5. Assemble Pinwheels: Roll out the vegan puff pastry on a clean surface. Spread the cooled spinach mixture evenly over the pastry, leaving the bottom quarter free of filling. Sprinkle crumbled vegan feta cheese over the spinach, then carefully roll the pastry into a tight log.
  6. Slice Pinwheels: Cut the rolled pastry into approximately 1 cm thick slices, yielding around 20 pinwheels.
