  • Total Time: 1 hour 50 minutes
  • Yield: 8 servings

Ingredients

Potatoes

  • 4 large russet potatoes (about 10 oz or 260 g each)

Vegan Cheese Sauce

  • Vegan cheese sauce (prepared separately, about 1 cup)

Veggies & Marinade

  • 10 oz bag frozen broccoli/cauliflower
  • 2 scallions (green part only, chopped)
  • 8 oz cremini mushrooms (cleaned & sliced)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon maple syrup
  • 1/2 teaspoon liquid smoke
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon freshly ground pepper

Instructions

  1. Prepare the vegan cheese sauce: If using a homemade vegan cheese sauce, prepare it first according to your recipe and set it aside for later use.
  2. Preheat the oven: Set your oven to 400°F (204°C) to prepare for baking the potatoes.
  3. Prepare the potatoes: Scrub the russet potatoes clean under running water and poke holes all over each potato using a fork to allow steam to escape during baking.
  4. Bake the potatoes: Place the potatoes directly on the oven rack and bake for 50 to 60 minutes, or until a fork easily pierces through the flesh, indicating they are fully cooked.
  5. Prep the mushrooms and marinade: While the potatoes bake, clean and slice the cremini mushrooms. In a small dish or ziplock bag, whisk together the soy sauce, maple syrup, liquid smoke, smoked paprika, garlic powder, and freshly ground pepper to create the marinade.
  6. Marinate the mushrooms: Add the sliced mushrooms to the marinade, ensuring they are well coated, and let them marinate for about 30 minutes to absorb the flavors.
  7. Sauté the mushrooms: Pour the marinated mushrooms and marinade into a skillet over medium-high heat. Cook until the mushrooms have reduced in size and the marinade has mostly evaporated, creating a flavorful sauté.
  8. Cool the potatoes: Once baked, remove the potatoes from the oven and let them cool for approximately 30 minutes so they are easier to handle.
  9. Hollow the potatoes: Slice each potato lengthwise in half. Carefully scoop out the center flesh, leaving about 1/3 inch of potato around the edges to maintain the structure of the skins.
  10. Crisp the potato skins: Place the hollowed potato skins on a parchment-lined baking sheet and bake at 450°F (232°C) for 20 minutes to crisp up the skins.
  11. Prepare the frozen vegetables: While the skins bake, cook or steam the frozen broccoli/cauliflower according to package instructions until tender.
  12. Assemble the potato skins: Spread a layer of vegan cheese sauce inside each crispy potato skin, top with the cooked broccoli/cauliflower, then add the sautéed mushrooms. Add another layer of vegan cheese sauce on top to enhance creaminess.
  13. Add scallions and bake again: Sprinkle chopped green parts of scallions over each filled potato skin. Return the baking sheet to the oven and bake for an additional 5 to 10 minutes, allowing the cheese sauce to warm and meld flavors.
  14. Serve: Serve the vegan potato skins warm, either on their own or accompanied by your favorite vegan sour cream or dip.

Notes

  • For best results, use starchy russet potatoes for crispy skins and fluffy interiors.
  • Leftover potato flesh can be saved and used in mashed potatoes or soups.
  • The vegan cheese sauce can be homemade or store-bought, depending on preference.
  • Adjust seasoning and spice levels according to taste.
  • For a gluten-free version, ensure the soy sauce used is gluten-free.
  • These potato skins make a great party appetizer or a hearty snack.
