For the Mango Bread
- 2 1/4 cups (280g) all-purpose plain flour, spooned and leveled
- 3/4 cup (150g) granulated sugar
- 3 teaspoons baking powder
- 1/8 teaspoon turmeric powder (optional, for color)
- Pinch of salt (optional)
- ~1 1/4 cups (300g) mango puree (approximately 2 large very ripe mangos or 2 cups chopped mangos)
- 1/3 cup (85g) dairy-free milk
- 1/3 cup (85g) neutral flavored oil
- 1 tablespoon lemon juice or apple cider vinegar (optional)
- 1 teaspoon vanilla extract
- ~3/4 cup (120g) diced mango (optional, about 1 small ripe mango)
Instructions
- Make the crumble topping (optional): In a small mixing bowl, combine the flour, shredded coconut, melted vegan butter, and sugar. Mix using a spoon or your fingertips until the mixture is flaky and crumbly. Set this topping aside in the fridge until ready to use.
- Preheat the oven and prepare the pan: Preheat your oven to 180°C (355°F). Line or grease an 8-inch (20 cm) loaf pan with parchment paper, ensuring some paper overhangs the sides for easy removal. Note that a longer pan will reduce baking time slightly.
- Mix dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, turmeric powder (if using), and salt until well combined and lump-free.
- Add wet ingredients: Pour the mango puree, dairy-free milk, neutral oil, lemon juice or apple cider vinegar, and vanilla extract into the dry mixture. Mix gently until just combined; avoid overmixing to keep the bread tender.
- Fold in diced mango: Gently fold the diced mango pieces into the batter to distribute evenly without breaking them down.
- Transfer batter to pan and add crumble: Pour the batter into the prepared loaf pan and smooth the top. If using, sprinkle the refrigerated crumble topping evenly over the batter.
- Bake the bread: Bake in the preheated oven for 60 to 70 minutes. The bread is done when a toothpick inserted in the center comes out clean or with just a few moist crumbs, but no wet batter.
- Cool the bread: Allow the bread to rest in the loaf pan for 15 minutes before transferring it to a wire rack to cool completely. This helps it set and makes slicing easier.
- Serve: Use a sharp serrated knife to slice the mango bread. Serve warm or at room temperature for best flavor and texture.
- Store leftovers: Keep any leftover bread in an airtight container at room temperature for 1-2 days, or refrigerate for up to 3 days. You can also freeze portions for up to one month. Warm before serving for a freshly baked taste.

- Using very ripe mangoes enhances the natural sweetness and flavor intensity in the bread.
- The turmeric powder is optional and mainly added to give the bread a vibrant yellow color.
- Do not overmix the batter to maintain a tender crumb and avoid toughness in the bread.
- The crumble topping is optional but adds a delightful texture and flavor contrast.
- If you don’t have dairy-free milk, any plant-based milk like almond, soy, or oat milk works well.
- To check doneness, insert a toothpick in the center; some moist crumbs are acceptable since this is a moist bread.
