  • Total Time: 25 minutes
  • Yield: 2 servings

Ingredients

Chia Pudding

  • 2 cups homemade almond milk
  • 1/2 cup organic chia seeds
  • 2 tablespoons organic unrefined granular sweetener

Dark Cherry Chia Jam

  • 2 cups organic dark cherries (pitted)
  • 2 tablespoons organic chia seeds
  • 2 tablespoons filtered/purified water
  • 1 tablespoon organic lemon juice (freshly squeezed)

Chocolate Add-In

  • 1/4 cup Enjoy Life mini-chocolate chips
  • 1 teaspoon organic coconut oil

Additional Fresh Cherries

  • 1 cup organic dark cherries (pitted)

Instructions

  1. Prepare the chia pudding: In a Vitamix or similar high-speed blender, combine the homemade almond milk, 1/2 cup chia seeds, and unrefined granular sweetener. Pulse 5-6 short times just enough to mix without breaking down the chia seeds.
  2. Refrigerate chia pudding: Transfer the blended mixture to a small bowl and refrigerate for about 15 minutes until it firms up to a pudding consistency.
  3. Make the dark cherry chia jam: Place the organic dark cherries, 2 tablespoons chia seeds, filtered water, and lemon juice into the Vitamix. Pulse or blend until the cherries break down but avoid over processing to retain texture. Set aside. Note that only about 1/4 of this jam is used for the parfait; store the rest in an airtight BPA-free container in the refrigerator.
  4. Prepare the chocolate add-in: In a small saucepan over very low heat, combine mini-chocolate chips and coconut oil. Stir gently until melted and smooth, taking care not to burn the chocolate. Remove from heat and set aside.
  5. Assemble the parfait (large single serving): In a large glass or mason jar, layer starting at the bottom with half the chia pudding, followed by 3-4 tablespoons dark cherry chia jam, 1/2 cup fresh dark cherries, 3-4 tablespoons chocolate add-in, then the other half of the chia pudding, another 3-4 tablespoons of cherry jam, 1/2 cup fresh cherries, and finish with a 1-2 tablespoon chocolate drizzle on top.
  6. Assemble the parfait (two smaller servings): Divide the ingredients evenly between two serving glasses. Begin layering with 1/4 of the chia pudding, then 2-3 tablespoons of dark cherry chia jam, 1/4 cup fresh cherries, 2-3 tablespoons chocolate add-in, followed by the remaining 1/4 chia pudding, another 2-3 tablespoons cherry jam, 1/4 cup cherries, and top with 1 tablespoon chocolate drizzle.

Notes

  • The chia pudding can be made up to a day ahead and kept refrigerated to save time.
  • Use fresh or frozen cherries depending on availability; thaw frozen cherries before use in the jam for the best texture.
  • The dark cherry chia jam leftover can be used as a topping for toast or oatmeal.
  • For a nut-free option, substitute almond milk with any other plant-based milk.
  • Ensure not to over blend the chia seeds to maintain the pudding’s texture.
