- Blend the Rice Mixture: After soaking, transfer the rice and cinnamon water into a blender and blend until smooth, creating a creamy base.
- Add Ube Halaya: Add the ube halaya to the blended rice mixture and continue blending until the mixture is smooth and creamy, fully incorporating the ube flavor and vibrant purple color.
- Strain the Mixture: Pour the blended mixture through a fine mesh strainer or nut milk bag to remove any rice pulp. Use a gentle pressing or squeezing motion to extract as much liquid as possible, then discard the leftover pulp.
- Combine with Milks and Flavorings: Return the strained rice milk to the blender. Add the vegan evaporated milk, vegan condensed milk, ube extract, and a pinch of salt. Blend again until everything is thoroughly combined and smooth.
- Adjust Consistency: Pour the blended horchata into a container and add cold water to thin the drink to your desired consistency, using between ¼ to 3 cups of water. The recipe suggests starting with 2 cups.
- Sweeten to Taste: Taste the ube horchata and add additional sweetener if desired, adjusting sweetness according to preference.
