Ingredients
Brownie Batter
- 150 g unsalted butter
- 75 g light brown soft sugar
- 130 g white sugar (finely granulated, e.g. caster)
- 1 large egg
- 2 tsp ube extract
- 175 g plain all-purpose flour
- 2 tbsp cornstarch (white finely ground powder)
- 1/8 tsp salt (optional)
- 150 g white chocolate chips
Instructions
- Preheat oven: Set your oven to 180°C (160°C fan) / Gas Mark 4 / 350°F to ensure it’s ready for baking the brownies.
- Melt butter and mix sugars: In a large heatproof bowl, melt the unsalted butter in the microwave for 30-50 seconds. Once melted, beat in both light brown soft sugar and white caster sugar until the mixture is smooth and thickened.
- Add egg and ube extract: Thoroughly beat in the large egg and ube extract until the mixture is fully combined and uniform in color and texture.
- Combine dry ingredients: Sieve in the plain all-purpose flour and cornstarch, then gently stir until just combined to avoid overmixing and preserve brownie texture.
- Incorporate salt and white chocolate chips: Add the optional salt for balance and fold in the white chocolate chips evenly throughout the batter.
- Prepare baking pan and pour batter: Grease and line an 8-inch square baking pan. Pour in the brownie batter and smooth the top gently with a spatula for even baking.
- Bake brownies: Place the pan in the preheated oven and bake for 20-25 minutes. The brownies are done when there is only a slight wobble in the center, indicating a fudgy interior.
