Instructions

  2. Cook the Mixture: In a 4-quart saucepan, combine the water, granulated sugar, and 1 cup cornstarch. Place the pan over medium-high heat. Once the mixture reaches a simmer, reduce the heat to medium and stir constantly. Continue stirring until the mixture thickens and attains a gel-like consistency—thick but still pourable.
  3. Add Coloring and Continue Cooking: Add 6 drops of red food coloring, stirring thoroughly to combine evenly. For a richer color, add additional drops as desired. Let the mixture cook for another 10 minutes while stirring, then turn off the heat.
  4. Set the Turkish Delight: Pour the thickened mixture carefully into the prepared baking pan. Allow it to sit uncovered at room temperature for about 4 hours or until it solidifies completely into a firm gel.
  5. Prepare Coating and Cut: Mix the powdered sugar and 3 tablespoons of cornstarch. Sprinkle half of this mixture evenly on a clean surface like a cutting board. Gently flip the solidified lokum onto this surface and sprinkle the remaining coating mixture on top to prevent sticking. Using a large knife, slice the Turkish Delight into 1-inch cubes both vertically and horizontally.
  6. Finish and Serve: Toss the cut cubes gently in the remaining powdered sugar and cornstarch mixture to ensure all sides are coated and prevent sticking. Arrange on a serving plate and enjoy.
