Ingredients

Marinade

Instructions

  1. Prepare marinade: In the bottom of a zipper-top plastic bag, combine oil, minced garlic, minced rosemary, minced thyme, 1 tablespoon salt, and 1 1/2 teaspoons black pepper to create the marinade paste.
  2. Score the tri-tip: Pat the tri-tip roast dry using paper towels. Using a sharp knife, carefully score the fat layer by cutting through the fat but not into the meat to help the marinade penetrate and to aid in rendering the fat when cooking.
  3. Marinate the steak: Add the tri-tip to the bag with the marinade paste. Seal the bag and turn it several times to coat the roast evenly. Refrigerate and marinate for at least 1 hour, up to 2 hours. Before grilling, let the steak stand at room temperature for 30 minutes to ensure even cooking.
  4. Preheat the grill: Heat your grill over high heat for about 10 minutes. Clean the grill grate thoroughly and oil it to prevent sticking before placing the steak to cook.
  5. Sear the tri-tip: Place the tri-tip on the grill over direct heat. Grill it for about 3 to 4 minutes per side, turning occasionally until the outside is browned and charred, creating a flavorful crust.
  6. Cook to desired doneness: Move the tri-tip to an area of the grill with indirect heat. Continue grilling for an additional 20 to 30 minutes, turning occasionally and monitoring the internal temperature to the desired doneness: rare (120-125°F), medium rare (130-135°F), medium (140-145°F), medium well (150°F), or well done (160°F).
  7. Rest and slice: Transfer the tri-tip to a cutting board and let it rest for 10 to 15 minutes, allowing juices to redistribute. Finally, slice the steak thinly against the grain for optimal tenderness and serve.
