Ingredients
Wet Ingredients
- 1 cup vanilla protein shake (e.g. Fairlife 26g Protein Shake)
- ⅓ cup plain nonfat Greek yogurt (e.g. Oikos Pro Plain, 25 grams protein)
- 1 tablespoon sweetened condensed milk
- 1 tablespoon evaporated light milk (or 2% milk)
- ½ teaspoon vanilla extract
Dry Ingredients
- ½ cup protein oats (Bob’s Red Mill or quick rolled oats)
- 1 tablespoon basil seeds (or chia seeds)
- ½ teaspoon ground cinnamon
- Pinch of cinnamon (for topping)
- ½ teaspoon coconut flakes
Toppings
- 2 tablespoons light whipped topping
- ⅓ cup sliced strawberries
- Monk fruit sweetener (optional, to taste)
Instructions
- Combine Wet Ingredients: In a mason jar or airtight container, mix the vanilla protein shake, plain nonfat Greek yogurt, sweetened condensed milk, evaporated milk, and vanilla extract together until smooth and well combined.
- Add Dry Ingredients and Seeds: Stir in the protein oats, basil or chia seeds, and ground cinnamon. Mix thoroughly. If you prefer a sweeter taste, add more condensed milk or monk fruit sweetener to taste and mix again.
- Refrigerate Overnight: Cover the container tightly and refrigerate for at least 6 hours or overnight. This resting time allows the oats to soften and the mixture to thicken into a creamy consistency.
- Serve and Garnish: Divide the thickened oat mixture evenly into two serving dishes. Top each serving with 1 tablespoon of light whipped topping, sliced strawberries, a sprinkle of cinnamon, and coconut flakes for added texture and flavor.
Notes
- You can substitute basil seeds with chia seeds based on availability or preference.
- Adjust the sweetness level by adding more sweetened condensed milk or monk fruit sweetener as desired.
- The recipe can be made ahead and stored refrigerated for up to 2 days for convenience.
- Light whipped topping can be replaced with Greek yogurt or coconut whipped cream for different tastes or dietary needs.
