Ingredients

Steak and Seasoning

  • 8 ounces top sirloin steak (2 small steaks, 228 grams)
  • Kosher salt & freshly-ground black pepper, to taste
  • 1 Tablespoon neutral oil (15 milliliters)
  • 1 Tablespoon unsalted butter (14 grams)
  • 6 sprigs fresh thyme
  • 1 sprig fresh rosemary

Crostini and Toppings

  • 1 recipe homemade crostini or store-bought
  • 4 ounces blue cheese, crumbled (125 grams)
  • 2 Tablespoons freshly-snipped chives (12 grams)

Garlic Sauce

  • 1/4 cup mayonnaise (60 grams)
  • 1/4 cup full-fat sour cream (60 grams)
  • 2 teaspoons minced garlic (2 large cloves)
  • 1 Tablespoon fresh lemon juice (15 milliliters)
  • Kosher salt & freshly-ground black pepper, to taste

Instructions

  1. Bring Steaks to Room Temperature: Remove the steaks from the refrigerator and let them sit at room temperature for 30-60 minutes to ensure even cooking.
  2. Season the Steaks: Pat steaks dry thoroughly with paper towels. Season all sides generously with kosher salt and freshly-ground black pepper.
  3. Heat Skillet and Sear Steaks: Add neutral oil to the bottom of a cast iron skillet and heat over high until the oil shimmers and is very hot. Carefully place the steaks in the pan with space between them and do not move them. Let sear to develop a brown crust, about 3 minutes.
  4. Flip and Finish Searing: Flip steaks and cook for another 2-3 minutes. During the last minute, add butter, fresh thyme, and rosemary to the skillet. Continuously baste steaks with the melted herb butter using a spoon until an internal temperature of 130-135°F (54-57°C) is reached for medium rare.
  5. Rest and Slice Steaks: Transfer steaks to a plate and let rest for 5-10 minutes to redistribute juices. Then slice thinly into strips against the grain.
  6. Prepare Garlic Sauce: In a small bowl, whisk together mayonnaise, sour cream, minced garlic, fresh lemon juice, salt, and pepper until smooth. Adjust seasoning as needed. Set aside.
  7. Assemble Crostini: Arrange crostini slices on a sheet pan. Sprinkle each with about 2 teaspoons of blue cheese crumbles.
  8. Broil Blue Cheese: Place the sheet pan under a broiler set on high for 1-2 minutes, just until the blue cheese is warmed and slightly softened but not completely melted.
