Instructions
- Cream Butter and Sugars: In a large mixing bowl, cream together the butter, sugar, and brown sugar until the mixture is light and fluffy, ensuring a smooth base for the dough.
- Add Liquids: Beat in the Baileys Irish Cream Liqueur, egg, and vanilla extract until the mixture is well combined and uniform in texture.
- Mix Dry Ingredients: Gradually add the all-purpose flour, baking soda, cocoa powder, and cornstarch to the wet mixture. Mix until a smooth but thick dough forms. Note that the dough will be very thick at this stage.
- Shape Cookies: Scoop about 1 tablespoon of dough, roll into balls, and gently press each to slightly flatten. Place them spaced out on a parchment-lined baking sheet. Remember, the cookies won’t rise much during baking.
- Bake: Preheat the oven to 350°F (175°C). Bake the cookies for approximately 6 minutes, or until you notice slight cracking at the edges. Avoid overbaking as the cookies are meant to remain moist and cake-like.
- Cool on Sheet: Remove the cookies from the oven and let them cool on the baking sheet for a couple of minutes until they firm up enough to be moved without breaking.
- Transfer to Cooling Rack: Move the cookies onto a wire cooling rack to cool completely.
- Melt Chocolate: In a small microwave-safe bowl, melt the white chocolate chips in 20-second increments, stirring between each, until smooth. Be careful not to burn the chocolate.
- Dip and Decorate: Once the cookies are cool, dip them into the melted white chocolate as much as desired, then place them on parchment paper. Immediately add sprinkles while the chocolate is still wet.

- The dough is thick and does not rise much during baking, so don’t expect large, fluffy cookies.
