Ingredients
Sweet Potato Mixture
- 3 lb sweet potatoes (peeled and cut into 1-inch chunks)
- ¼ cup unsalted butter (melted)
- ¾ tsp salt
- ⅛ tsp ground allspice
- ⅓ cup light brown sugar (packed)
- 2 large eggs (lightly beaten)
Pecan Topping
- ¼ cup unsalted butter (melted)
- ⅓ cup light brown sugar (packed)
- ⅓ cup all-purpose flour
- 1 tsp cinnamon
- 1 cup pecans (coarsely chopped)
Topping
- 15 regular-size white marshmallows
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and position the oven rack in the middle.
- Cook Sweet Potatoes: Bring a large pot of water to a boil. Add the peeled and cut sweet potatoes and cook for 20–25 minutes until very soft and tender. Drain well, then place on a paper towel to absorb any excess water. Set aside to cool slightly.
- Prepare Pecan Topping: While the sweet potatoes cook, melt ¼ cup butter in a pot or in the microwave. Stir in the brown sugar, flour, and cinnamon until the mixture looks slightly clumpy and well combined. Mix in the chopped pecans and set aside.
- Mash Sweet Potatoes: In a large bowl, mash the cooked sweet potatoes with the melted butter, salt, ground allspice, light brown sugar, and beaten eggs until smooth, creamy, and fully combined.
- Assemble Casserole: Transfer the sweet potato mixture into a 9×13 inch (23cm x 33cm) baking dish and spread evenly. Sprinkle the pecan topping evenly over the surface, followed by an even layer of the marshmallows on top.
- Bake: Bake the casserole for 30 minutes, or until the topping is golden brown and the marshmallows have melted and developed a lightly toasted color. Remove from the oven and allow to cool slightly before serving.
Notes
- Use fresh sweet potatoes for best flavor and texture. Canned sweet potatoes can be substituted but adjust moisture accordingly.
- The pecan topping can be made ahead and stored in the refrigerator until ready to assemble.
- If you prefer, substitute marshmallows with mini marshmallows for a more even topping.
- This casserole can be reheated in the oven at 350°F for 15–20 minutes until warmed through.
