Ingredients

Ground Beef and Spices

  • 1 lb Ground Beef (96/4 lean to fat ratio)
  • 1 tsp Ground Ginger
  • 1 tsp Chili Powder
  • 1/2 tsp Black Pepper

Vegetables and Sauce

  • 12 oz Brussels Sprouts (halved)
  • 1 Tbsp (16g) Chili Oil (or your choice of oil)
  • 1/2 cup (120g) Sweet Chili Sauce

Instructions

  1. Prep Brussels Sprouts: Microwave the Brussels sprouts for 2 minutes or until tender. Once cooled, transfer to a cutting board and cut them in half.
  2. Season the Beef: Mix the ground ginger, chili powder, and black pepper together and sprinkle half of this spice mixture over the ground beef, coating it evenly.
  3. Cook the Beef Crust: Heat a large skillet over medium-high heat and add the chili oil. When hot, place the ground beef in the skillet seasoned side down. Sprinkle the remaining half of the spices on top of the beef. Cook for 2-3 minutes until a crust forms on the bottom.
  4. Break Apart and Cook Beef: Flip the beef and cook for another 2-3 minutes. Then use a spatula to break the beef into crumbles, and continue cooking until no pink remains, about 2-3 more minutes.
  5. Cook Brussels Sprouts: Push the cooked beef to the side of the pan and place the Brussels sprouts cut side down in the skillet. Cook for 6-8 minutes, stirring occasionally, until they develop a slight char.
  6. Combine and Sauce: Remove the skillet from heat. Mix the Brussels sprouts and ground beef together thoroughly. Drizzle the sweet chili sauce over the mixture and stir until everything is evenly coated.
  7. Serve: Serve the skillet hot, paired with rice, cauliflower rice, chopped scallions, toasted sesame seeds, or your favorite garnishes.
