This Suya Recipe features authentic West African beef kabobs marinated in a flavorful blend of peanut butter, spices, and tomato paste, then grilled to perfection. Suya is a popular street food in Nigeria known for its spicy, smoky flavor and tender texture. Perfect for a summer barbecue or a delicious, protein-packed meal.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Meat

  • 1 pound NY Strip or sirloin steak (cut into 1 inch cubes)

Marinade

  • 1 small onion (roughly chopped)
  • 2 tablespoons creamy peanut butter (unsalted)
  • 1 tablespoon tomato paste
  • 1 tablespoon avocado oil (plus more for wiping the grates)
  • 2 teaspoons allspice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon ground ginger

Instructions

  1. Prepare the Steak: Place the steak cubes in a large bowl and set aside while you prepare the marinade.
  2. Make the Marinade: In a food processor, combine the chopped onion, creamy peanut butter, tomato paste, avocado oil, allspice, salt, crushed red pepper, and ground ginger. Blend until the mixture is completely smooth and well combined.
  3. Marinate the Steak: Pour the blended marinade over the steak cubes in the bowl. Toss thoroughly to coat all the meat pieces evenly. Cover the bowl and refrigerate for 20 minutes to allow the flavors to infuse.
  4. Skewer the Meat: Once marinated, thread the steak cubes onto wooden or metal skewers, placing the pieces tightly together without gaps. Pour any leftover marinade over the assembled kabobs for extra flavor.
  5. Prepare the Grill: Lightly oil the grill grates using a paper towel dipped in oil to prevent sticking. Preheat the grill to medium-high heat.
  6. Grill the Kabobs: Place the skewers on the preheated grill. Cook, turning once, until the beef is nicely browned and cooked through, about 10 to 15 minutes depending on your preferred level of doneness.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Adjust the crushed red pepper to control the spiciness of the kabobs.
  • Serve with sliced onions, tomatoes, or your favorite side for a complete meal.
  • For best flavor, use fresh spices and quality peanut butter without added sugar or salt.
