  • 1/2 cup sweetened coconut milk (carton type)
  • 1/4 cup raspberry pearls or boba (with liquid)
  • 1/2 cup + 2 Tbsp berry syrup (recipe below)

Summer-Berry Refresher Base

  • 1/2 cup + 2 Tbsp berry syrup
  • 1 1/3 cups water
  • 1/2 tsp citric acid
  • 1/2 tsp green coffee extract powder (optional)
  • 1/4 tsp blue spirulina powder

Berry Syrup

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 tsp blueberry extract
  • 1/2 tsp raspberry extract
  • 1/2 tsp blackberry extract

Instructions

  1. Shake drink mixture: Add about 1/2 cup of the prepared Summer-Berry Refresher Base and 1/2 cup sweetened coconut milk to an ice-filled shaker. Shake well to fully combine and chill the drink.
  2. Prepare glass: Place 1/4 cup raspberry pearls along with their liquid into the bottom of a serving glass.
  3. Assemble drink: Pour the entire mixture from the shaker, ice included, over the raspberry pearls in the glass to serve.
  4. Make Summer-Berry Refresher Base: In a large jar or container, combine 1/2 cup + 2 tablespoons berry syrup, 1 1/3 cups water, 1/2 teaspoon citric acid, optional 1/2 teaspoon green coffee extract powder, and 1/4 teaspoon blue spirulina powder. Shake well to blend all ingredients, then refrigerate until ready to use.
  5. Prepare berry syrup: In a medium saucepan, combine 1 cup water and 1 cup granulated sugar. Bring to a boil over medium heat.
  6. Simmer syrup: Once boiling, reduce heat to low and let the mixture simmer for about 10 minutes until slightly thickened.
  7. Flavor syrup: Remove the syrup from heat and stir in 1/2 teaspoon each of blueberry, raspberry, and blackberry extracts.
  8. Cool syrup: Pour the syrup into a mason jar or bowl and refrigerate until completely cooled. The syrup will thicken further as it cools. Use this syrup as the base for the refresher.
