Ingredients
Flavor and Color
- 2 teaspoons strawberry extract
- 1 teaspoon red gel food coloring
Main Fudge Base
- 3 cups sugar
- 3/4 cup unsalted butter, softened
- 2/3 cup half and half
- 12 ounces white chocolate chips
- 7 ounces marshmallow cream
- 1 1/2 teaspoons vanilla extract
Instructions
- Prepare flavor mixture: In a small bowl, combine the red gel food coloring and strawberry extract, whisking until fully blended to create a bright, flavorful strawberry mixture.
- Line the pan: Line a 9-inch square baking pan with parchment paper to ensure easy removal of the fudge once set, then set aside.
- Heat fudge base: In a 3-quart saucepan over medium heat, combine the sugar, softened butter, and half and half. Stir occasionally until the mixture reaches a boil.
- Cook the mixture: Maintain a consistent boil, stirring constantly with a spatula, and continue cooking for 3 to 4 minutes to properly melt and combine the ingredients.
- Add white chocolate chips: Remove the saucepan from heat, add the white chocolate chips, cover, and allow to sit undisturbed for 2 minutes to soften the chocolate.
- Blend fudge smooth: Whisk the mixture until smooth, then incorporate the marshmallow cream and vanilla extract, stirring until fully combined and creamy. Pour half of this white fudge into the prepared baking dish.
- Mix strawberry flavor: Stir the red gel and strawberry extract mixture into the remaining half of the fudge in the saucepan, coloring and flavoring it vibrantly.
- Create swirl effect: Drop dollops of the strawberry fudge over the white fudge in the baking dish. Use a butterknife to gently swirl the two fudge mixtures together for a marbled appearance.
- Set the fudge: Allow the fudge to cool completely at room temperature, then refrigerate overnight to fully set before cutting into 1-inch squares for serving.
Notes
- Be sure to whisk the red gel and strawberry extract well to avoid clumps in the colored fudge.
- Use parchment paper to make removing the fudge easier and prevent sticking.
- Stir consistently while boiling the sugar mixture to avoid burning.
- Let the fudge rest and melt the chocolate covered to ensure a smooth texture.
- The swirl technique adds a beautiful presentation but can be adjusted or skipped if desired.
- Fudge can be stored in an airtight container in the refrigerator for up to 2 weeks.
