Ingredients
Vegetables
- 4 cups (170g) Coleslaw Mix
- 2 Frozen Crushed Ginger Cubes (or 2 teaspoons freshly crushed ginger)
- Chives or Scallions (for serving)
Proteins
- 1 pound Ground Chicken Breast
Sauces & Oils
- 2 teaspoons (10g) Olive Oil
- 3 Tablespoons (63g) Honey
- 2 Tablespoons (30g) Chili Garlic Sauce (or Sriracha)
- 2 Tablespoons (30g) Coconut Aminos (or low sodium soy sauce)
- 2 Tablespoons (30g) Chinese Black Vinegar (or balsamic vinegar)
Others
- ¼ cup Water
- 2 packs (95g each) Trader Joe’s Squiggly Knife Cut Style Noodles (or other instant ramen like Momofuku noodles*)
- Toasted Sesame Seeds (for serving)
Instructions
- Boil Noodles: Bring a pot of water to a boil to cook the noodles according to the package instructions.
- Sauté Vegetables: Heat olive oil in a large nonstick pan over medium heat. Add the coleslaw mix and a pinch of salt. Cook until vegetables begin to brown on the bottom but remain tender-crisp, about 3-4 minutes. Transfer to a bowl and set aside.
- Cook Ground Chicken: Using the same pan, add ground chicken. Cook for 2-3 minutes per side until golden brown, then break apart with a spatula and cook through completely.
- Add Sauce Ingredients: Stir in honey, chili garlic sauce, coconut aminos, vinegar, ginger, and water with the cooked chicken. Cook until the sauce reduces and caramelizes on the bottom of the pan, about 3-4 minutes, avoiding over-stirring to allow browning.
- Combine Noodles and Sauce: While the sauce reduces, cook noodles in boiling water. Reserve ½ cup of the noodle water before draining the rest. Add the noodles, reserved noodle water, and included sauce packets to the pan with the chicken and vegetables. Stir to combine and adjust liquid as needed.
- Serve: Garnish with sliced chives or scallions and toasted sesame seeds. Serve immediately and enjoy!
Notes
- You can substitute chili garlic sauce with Sriracha for a milder heat.
- Use low sodium soy sauce if coconut aminos are unavailable.
- Frozen ginger cubes are a convenient alternative to fresh ginger.
- Reserve some noodle cooking water to adjust the sauce consistency and help everything combine smoothly.
- For added texture, toasted sesame seeds provide a nice crunch and nutty flavor.
