Enhanced with chia, hemp seeds, and shaved unsweetened coconut toppings, this smoothie offers an excellent source of fiber, antioxidants, and essential fatty acids.

  • Total Time: 5 minutes
  • Yield: 2 servings

Ingredients

Base Ingredients

  • 2-3 cups packed fresh spinach
  • 1/2 cup unsweetened almond milk
  • 1 ripe banana
  • 1 Granny Smith apple, cored and cubed
  • 1 cup chopped cucumber
  • 4 pitted dates
  • 1 tablespoon flax seeds
  • Squeeze of fresh lemon juice
  • Large handful of ice cubes

Toppings

  • Shaved unsweetened coconut
  • Chia seeds
  • Hemp seeds

Instructions

  1. Blend Base Ingredients: Add the packed spinach, unsweetened almond milk, and banana into a blender. Blend until all ingredients are combined into a smooth mixture.
  2. Add Remaining Ingredients: Add the cubed Granny Smith apple, chopped cucumber, pitted dates, flax seeds, and a squeeze of lemon juice to the blender. Blend for 2 to 3 minutes until the mixture is completely smooth and creamy.
  3. Incorporate Ice: Add a large handful of ice cubes to the blender and blend for an additional 30 to 60 seconds to chill the smoothie and achieve a frosty texture.
  4. Serve and Garnish: Pour the smoothie evenly into two glasses. Top each glass with shaved unsweetened coconut, chia seeds, and hemp seeds as desired. Serve immediately for optimal freshness, or store in the refrigerator for later consumption up to 24 hours.

Notes

  • For a thinner consistency, add more almond milk as needed.
  • Use fresh spinach for optimal flavor and nutrient content.
  • If dates are unavailable, substitute with medjool dates or a small amount of natural sweetener like maple syrup.
  • This smoothie is best consumed immediately to take full advantage of its nutrient profile.
  • Store leftovers in an airtight container in the fridge up to 24 hours; stir well before serving.
