Instructions
- Prepare the Pan: Grease a standard bundt pan generously with softened butter to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl fitted with a paddle attachment, combine gluten-free flour, baking powder, instant yeast, salt, and sugar. Mix these dry ingredients to blend evenly.
- Add Wet Ingredients: While the mixer runs on low speed, pour in lukewarm milk, eggs, and softened butter carefully.
- Knead the Dough: Increase the mixer speed to medium and mix for 3 minutes until the dough is very smooth and thick. Use an oiled spatula to scrape down the bowl sides and bottom to fully incorporate.
- Let Dough Rise: Cover the bowl tightly with plastic wrap and allow the dough to rise for 45 to 60 minutes, or until doubled in size.
- Prepare Coating: While waiting, melt the butter in a microwave-safe bowl. In a separate shallow bowl, combine white sugar, brown sugar, and cinnamon for the coating mixture.
- Shape Dough Balls: Once the dough has risen, pinch off small pieces and roll each into approximately 1-inch balls.
- Coat Dough Balls: Dip each dough ball into the melted butter, then roll thoroughly in the cinnamon-sugar mixture to coat completely. Repeat for all balls, using more cinnamon-sugar mixture as needed.
- Arrange in Pan: Place coated balls evenly in the greased bundt pan. Cover the pan with aluminum foil, plastic wrap, or a kitchen towel and let rest for 20 minutes to allow slight rising.
- Preheat Oven: Position oven rack lower and preheat the oven to 350°F (177°C).
- Make Caramel Sauce: In a microwave-safe bowl, melt butter, then stir in brown sugar and vanilla extract until combined and smooth.
- Add Sauce to Bread: Pour the caramel sauce evenly over the arranged dough balls in the bundt pan.
- Bake: Place the pan in the oven and bake for 35 to 40 minutes, or until the top is golden brown. If browning too quickly, cover loosely with foil.
- Cool and Serve: Allow the monkey bread to cool for 5 to 10 minutes, then invert onto a large serving plate or cake stand.
- Add Toppings: Optionally, sprinkle with chopped pecans or walnuts for added crunch and flavor before serving.
