This Soft Gluten-Free Monkey Bread is a delicious, pull-apart treat made from tender gluten-free dough balls coated in a buttery cinnamon-sugar mixture and baked with a rich caramel sauce topping. Perfect for sharing, this recipe yields a sweet, gooey bread that’s soft on the inside and delightfully caramelized on the outside, ideal for breakfast or dessert.

  • Total Time: 2 hours 10 minutes
  • Yield: 12 servings

Ingredients

Dough

  • 2 cups Milk (lukewarm)
  • 4 ½ cups Gluten-free flour
  • 2 ¼ teaspoons (1 packet) Instant yeast
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 2 Eggs
  • ¼ cup Sugar
  • 5 tablespoons Butter (softened)

Coating

  • ¾ cup Butter (melted)
  • 1 cup Sugar
  • 1 tablespoon Cinnamon
  • ⅔ cup Brown sugar

Caramel Sauce

  • ⅓ cup Brown sugar
  • ⅓ cup Butter (melted)
  • 1 teaspoon Vanilla extract

Topping

  • Chopped pecans or walnuts (optional)

Instructions

  1. Prepare the Pan: Grease a standard bundt pan generously with softened butter to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl fitted with a paddle attachment, combine gluten-free flour, baking powder, instant yeast, salt, and sugar. Mix these dry ingredients to blend evenly.
  3. Add Wet Ingredients: While the mixer runs on low speed, pour in lukewarm milk, eggs, and softened butter carefully.
  4. Knead the Dough: Increase the mixer speed to medium and mix for 3 minutes until the dough is very smooth and thick. Use an oiled spatula to scrape down the bowl sides and bottom to fully incorporate.
  5. Let Dough Rise: Cover the bowl tightly with plastic wrap and allow the dough to rise for 45 to 60 minutes, or until doubled in size.
  6. Prepare Coating: While waiting, melt the butter in a microwave-safe bowl. In a separate shallow bowl, combine white sugar, brown sugar, and cinnamon for the coating mixture.
  7. Shape Dough Balls: Once the dough has risen, pinch off small pieces and roll each into approximately 1-inch balls.
  8. Coat Dough Balls: Dip each dough ball into the melted butter, then roll thoroughly in the cinnamon-sugar mixture to coat completely. Repeat for all balls, using more cinnamon-sugar mixture as needed.
  9. Arrange in Pan: Place coated balls evenly in the greased bundt pan. Cover the pan with aluminum foil, plastic wrap, or a kitchen towel and let rest for 20 minutes to allow slight rising.
  10. Preheat Oven: Position oven rack lower and preheat the oven to 350°F (177°C).
  11. Make Caramel Sauce: In a microwave-safe bowl, melt butter, then stir in brown sugar and vanilla extract until combined and smooth.
  12. Add Sauce to Bread: Pour the caramel sauce evenly over the arranged dough balls in the bundt pan.
  13. Bake: Place the pan in the oven and bake for 35 to 40 minutes, or until the top is golden brown. If browning too quickly, cover loosely with foil.
  14. Cool and Serve: Allow the monkey bread to cool for 5 to 10 minutes, then invert onto a large serving plate or cake stand.
  15. Add Toppings: Optionally, sprinkle with chopped pecans or walnuts for added crunch and flavor before serving.

Notes

  • Ensure the milk is lukewarm to properly activate the yeast without killing it.
  • Gluten-free dough tends to be thicker; this is normal and helps hold the shape of the dough balls.
  • You can substitute pecans or walnuts with your favorite nuts or omit them entirely for a nut-free version.
  • If the crumb on the inside is too dense, make sure the dough is given enough rising time in a warm place.
  • Covering the pan loosely during baking helps prevent over-browning while allowing even cooking.
