Smoked Chicken Salad
- 4-5 cups chopped cooked smoked chicken meat (from a 3-4 lb whole smoked chicken)
- 1 cup mayonnaise

Instructions
- Brine the Chicken: Prepare a simple brine solution by dissolving salt, sugar, and lemon in water. Submerge the whole chicken in this brine for 4-8 hours to enhance flavor and moisture.
- Prepare Chicken for Smoking: After brining, pat the chicken dry thoroughly with paper towels. Stuff the chicken cavity with half an onion, half a lemon, and 3-4 garlic cloves. Tie the legs together securely with kitchen twine to maintain shape during smoking.
- Smoke the Chicken: Rub the entire chicken generously with a chicken rub seasoning. Preheat your smoker to 225°F (107°C) and place the chicken inside. Smoke it for about 2 1/2 hours, or until the internal temperature reaches 165°F (74°C).
- Cool and Debone the Chicken: Allow the smoked chicken to cool sufficiently so it can be handled comfortably. Remove all meat from the bones, discarding bones, tendons, fat, and skin. Chop the meat into small, bite-sized pieces.
- Make the Salad: In a large mixing bowl, combine the chopped chicken with mayonnaise, Dijon mustard, diced sweet onion, diced celery, black pepper, garlic powder, onion powder, and dried parsley. Mix thoroughly until all ingredients are well incorporated.
- Chill Before Serving: Transfer the prepared chicken salad into an airtight food storage container. Refrigerate for 2-3 hours to allow flavors to meld and chilled serving texture.
