Ingredients
Meats
- 1 lb. ground beef
- 1 lb. hot breakfast sausage (original if you prefer less spicy)
Vegetables & Herbs
- 3-4 large carrots (sliced, then cut into pumpkin shapes)
- 2 cups small diced gold potatoes
- 3 celery ribs (diced)
- 1 cup diced leeks (from 1 large leek)
- 1 tsp. minced garlic
- 10 mushrooms (cut in half, skull face cut into them)
Seasonings
- 1 Tbsp. Italian herb seasoning
- 3/4 tsp. salt
- 1/4 tsp. pepper
Liquids
- 10.5 oz. Campbell’s Condensed French Onion Soup
- 10.5 oz. Campbell’s Condensed Tomato Soup
- 1.5 cups water
- 32 oz. box beef broth
Instructions
- Brown the meats: In a large skillet over medium-high heat on the stovetop, brown the ground beef and hot breakfast sausage together. Crumble and cook thoroughly, then drain off the excess fat. Transfer the browned meat into the slow cooker.
- Prepare carrot pumpkins: Create pumpkin shapes from the carrot slices by making two straight slits for a stem, then cutting two triangles from the sides of the stem and removing them. Slice these into rounds, then add to the slow cooker with the meat.
- Add remaining ingredients: Add diced gold potatoes, celery, diced leeks, minced garlic, Italian herb seasoning, salt, pepper, Campbell’s Condensed French Onion Soup, Campbell’s Condensed Tomato Soup, water, and beef broth to the slow cooker, leaving out the mushrooms for now.
- Start slow cooking: Place the lid on the slow cooker and cook on HIGH for 4 hours or LOW for 8 hours, allowing all ingredients to meld and cook through.
- Prepare mushrooms: Near the end of cook time, cut each mushroom lengthwise to make two pieces. Use a straw to poke out eyes and a knife to create two slits for a nose on each mushroom half. Also, make slits on the stem to form skull faces.
- Finish with mushrooms: Add the carved mushrooms to the slow cooker once the primary cooking time is complete. Let them cook for an additional 10 minutes so they soften slightly while maintaining their shape.
Notes
- Wait to add the mushrooms until the end of cooking to keep their decorative shapes intact.
- If you prefer a milder stew, use original breakfast sausage instead of hot.
- Feel free to customize the herbs and spice levels based on your preferences.
