  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon pepper (plus more to taste after cooking)
  • 1/4-1/2 teaspoon red pepper flakes
  • 1 tablespoon liquid smoke
  • 1 bay leaf

Instructions

  1. Prepare the Roast: Heat the vegetable oil over medium-high heat in a large cast-iron skillet. Using two forks or tongs to hold the roast, sear it on all sides until it is nicely browned, ensuring to lock in the juices and add rich flavor.
  2. Slow Cook the Roast: Transfer the seared beef chuck roast to the slow cooker. Pour all the remaining ingredients (beef broth, balsamic vinegar, soy sauce, ketchup, honey, brown sugar, Dijon mustard, minced onions, beef bouillon, garlic powder, oregano, basil, smoked paprika, pepper, red pepper flakes, liquid smoke, and bay leaf) over the roast. Cover and cook on LOW for 7 hours or until the meat is fall-apart tender.
  3. Thicken the Sauce: Remove the cooked roast to a cutting board. Pour the remaining slow cooker liquid into a large saucepan or skillet with sides (avoid small saucepans). Simmer the liquid for 25-30 minutes, stirring occasionally, until it thickens significantly. Be alert towards the end as it thickens quickly.
  4. Shred and Combine: Meanwhile, shred the roast beef using forks. Return the shredded beef to the slow cooker and stir in the desired amount of the thickened sauce to ensure juicy, flavorful meat.
