Brisket and Spices
- 3 1/2 pound beef brisket (not corned beef)
- 1 tablespoon kosher salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 4 garlic cloves, minced
- 1 onion, sliced
Broth and Sauce
- 2 cups low sodium beef broth
- 3 tablespoons soy sauce (or coconut aminos)
- 1/4 cup ketchup
Vegetables
- 1 pound baby potatoes
- 4-5 large carrots, peeled and cut into large chunks
Thickening Slurry
- 1 tablespoon arrowroot powder (or cornstarch)
- 3 tablespoons cold water
Instructions
- Prepare spice rub: In a small bowl, combine kosher salt, pepper, garlic powder, onion powder, and oregano. Rub this spice mix evenly over both sides of the brisket.
- Arrange in slow cooker: Place the brisket fat side up in the slow cooker. Sprinkle minced garlic over the brisket, then top with the sliced onions, baby potatoes, and carrots.
- Mix and add liquid: Whisk together the beef broth, soy sauce, and ketchup in a medium bowl. Pour the mixture into the slow cooker until the brisket is just covered.
- Cook brisket: Cook on LOW for 7-8 hours or on HIGH for 4-6 hours until the meat is tender and falls apart easily. Once cooking is done, let the brisket rest in the cooker on WARM or transfer to a cutting board, cover with foil, and rest for 20 minutes.
- Make gravy: While resting, whisk arrowroot powder with cold water to form a slurry. Pour this into the cooking liquid in the slow cooker and whisk; it will thicken in 2-3 minutes.
- Slice and serve: Slice the brisket against the grain and serve with the thickened sauce and cooked vegetables on top.
- Optional Instant Pot sear: Turn on sauté mode, add oil, and sear brisket 2-3 minutes each side until browned for extra flavor. If needed, cut brisket in half to fit, searing in batches.
- Instant Pot layering: Place rubbed brisket fat side up in Instant Pot. Top with minced garlic, sliced onions, potatoes, and carrots.
- Add liquid and cook: Mix broth, soy sauce, ketchup and pour over brisket until just covered. Seal lid and cook on high pressure for 90 minutes. Let natural pressure release for 15 minutes, then release remaining pressure manually.
- Rest the brisket and thicken sauce: Remove brisket to a cutting board to rest. Turn Instant Pot to sauté and bring liquid to a boil. Stir in arrowroot slurry to thicken the sauce, cooking 2-3 minutes.
- Finish and serve: Slice the brisket against the grain or shred using forks. Return meat to sauce to keep warm until serving.
Notes
- For best flavor, sear the brisket before slow cooking or pressure cooking, though this step is optional.
- Resting the brisket after cooking allows juices to redistribute, ensuring moist meat.
- Use arrowroot powder for a gluten-free thickener; cornstarch is a fine alternative.
