- 1 lb ground beef
- 1 cup matchstick carrots
- 1 red bell pepper, cored and sliced
- 2-3 green onions, roughly chopped (reserve some for garnish)
- 3 garlic cloves, minced
Sauce and Noodles
- 1/2 cup low sodium soy sauce
- 1/2 cup brown sugar
- 1 3/4 cups beef stock
- 2 packets dry ramen noodles (discard flavor packets)
- Sesame seeds (for garnish)
Instructions
- Brown the Beef: Heat a skillet over medium-high heat and add the ground beef. Cook, breaking it up with a wooden spoon or spatula, until browned. Add the minced garlic and cook for another two minutes to release its aroma.
- Transfer to Slow Cooker: Move the browned beef and garlic into the slow cooker. Add the matchstick carrots, sliced red bell pepper, and chopped green onions (reserve some green onions for garnish).
- Prepare the Sauce: In a small bowl, whisk together the low sodium soy sauce, brown sugar, and beef stock. Pour this over the beef and vegetable mixture in the slow cooker and stir to combine thoroughly.
- Slow Cook: Set the slow cooker to the low setting and cook for 4 to 6 hours to allow flavors to meld and vegetables to soften.
- Add Noodles: About 30 minutes before the end of cooking, add the two packages of dry ramen noodles to the slow cooker, burying them in the sauce to ensure they’re covered. Discard flavor packets or save for another use.
- Finish Cooking: Continue cooking on low for another 30 minutes, or until the noodles have softened. Stir gently to incorporate the noodles into the sauce.
- Serve and Garnish: Portion the beef and noodle mixture into bowls and garnish with sesame seeds and the reserved green onions. Enjoy hot.
Notes
- Discard the ramen seasoning packets as they contain excess salt and additives; alternatively, save for another recipe if desired.
- For a thicker sauce, reduce the beef stock slightly or cook uncovered for the last 30 minutes if your slow cooker allows.
- Feel free to substitute beef stock with chicken or vegetable stock to adjust flavor.
- This recipe can be doubled for larger groups; just ensure your slow cooker is large enough.
