  • 1-1/2 pounds baby gold potatoes (diced, about 4 cups)
  • 1-1/2 cup frozen peas
  • 1 cup frozen corn

Liquids and Dairy

  • 3 cups chicken stock (or broth, high-quality like Swanson)
  • 5 tablespoons unsalted butter
  • 6 tablespoons flour
  • 3 cups whole milk
  • 1/2 cup heavy cream
  • 2 cups shredded sharp Cheddar cheese

Instructions

  1. Brown Beef: Heat olive oil in a large pot over high heat. Add ground beef along with salt and pepper. Sear the meat for about one minute on each side, then crumble it and continue cooking until it is deeply browned. Remove cooked beef with a slotted spoon, leaving about 2-3 tablespoons of grease in the pot. Discard any excess grease beyond this amount.
  2. Sauté Veggies: Add the carrots, celery, and onions (the mirepoix) to the pot. Cook for 6 to 8 minutes until they are softened, stirring occasionally but patiently. Add the diced potatoes, minced garlic, Italian seasoning, mustard powder, sage, and thyme. Stir constantly for 1 to 2 minutes until fragrant.
  3. Simmer Soup: Pour in the chicken stock and add the bay leaf if using. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium, cover the pot, and let the soup simmer for 10 to 15 minutes or until the potatoes are tender.
  4. Make Cream Base: In a separate pot, melt the butter over medium heat. Whisk in the flour and cook for one minute while stirring constantly to form a roux. Slowly add the milk while continuously whisking until the mixture is smooth. Continue cooking until thickened and gently bubbling. Remove from heat and stir in the heavy cream.
