Scotcharoos are a delightful no-bake treat combining crispy Rice Krispies with a rich mixture of peanut butter, corn syrup, and sugar, topped with layers of melted butterscotch and milk chocolate chips. Perfect for a quick and easy dessert or snack, these bars offer a crunchy, sweet, and fudgy experience that’s loved by all ages.

  • Total Time: 20 minutes
  • Yield: 12 servings

Ingredients

Base

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 5-5 1/2 cups Rice Krispies cereal

Topping

  • 1 cup butterscotch chips
  • 1 cup milk chocolate chips

Instructions

  1. Prepare the Rice Krispies: Measure out 5 cups of Rice Krispies cereal and place them in a large bowl. Set aside for mixing later.
  2. Prepare the baking dish: Spray a 13”x9” baking dish with cooking spray and set aside to ensure easy removal of the bars.
  3. Make the syrup mixture: In a medium saucepan over low to medium-low heat, stir together the light corn syrup and granulated sugar until the sugar is completely dissolved and the mixture is no longer grainy. It is essential to avoid boiling the mixture; if it starts to boil, immediately remove from heat.
  4. Add peanut butter: When the mixture is hot and nearly boiling (you might see a few bubbles forming along the sides but no full boil), remove it from the heat. Stir in the creamy peanut butter until smooth and fully combined.
  5. Combine with cereal: Pour the hot syrup and peanut butter mixture over the Rice Krispies. Quickly mix until all the cereal is coated evenly. If the mixture seems too wet or thin, add additional Rice Krispies a little at a time. Act fast as the mixture will begin to set.
  6. Press into pan: Transfer the combined cereal mixture into the prepared baking dish. Use a sheet of wax paper or lightly sprayed hands to press it evenly into the pan. Be careful as the mixture will be hot.
  7. Prepare the topping: In a medium bowl, combine the butterscotch chips and milk chocolate chips. Heat in the microwave at half power in 20-second increments, stirring well after each interval, until the chips are fully melted and smooth.
  8. Top the bars: Pour the melted butterscotch and chocolate mixture over the pressed cereal layer. Use an offset or rubber spatula to spread the topping evenly over the Scotcharoos.
  9. Set and serve: Allow the topping to set completely at room temperature before cutting into squares. Store the Scotcharoos in an airtight container for 5-7 days to maintain freshness.

Notes

  • You may use 5 to 5 1/2 cups Rice Krispies depending on desired texture and mixture consistency.
  • Do not let the syrup mixture boil to avoid grainy texture in the bars.
  • Working quickly is important because the mixture sets fast when combined with the cereal.
  • Press the mixture evenly using wax paper or lightly sprayed hands to avoid sticking and achieve a smooth surface.
  • Store in an airtight container at room temperature to keep freshness for up to one week.
