Baked to perfection with a savory flavor profile reminiscent of pizza, this recipe is easy to prepare, gluten-free, and suitable for a vegan diet.

  • Total Time: 50 minutes
  • Yield: 6 servings

Ingredients

Dry Ingredients

  • 1 cup old fashioned oats
  • 2 tablespoons almond flour (or use more oats to keep it nut-free)
  • 1/2 teaspoon baking powder
  • 2 teaspoons chia seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 cup finely chopped sun-dried tomato
  • 1 tablespoon nutritional yeast (optional)

Vegetables and Herbs

  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped fresh basil (or use 1 teaspoon dried)
  • 3 tablespoons chopped green onions (keep the green part for garnish)
  • Sliced tomato for topping
  • Green onion or chopped basil for topping

Wet Ingredients and Extras

  • 1 cup broth or water (or use 1/3 cup marinara and 3/4 cup water)
  • 1 tablespoon soy sauce (or tamari for Glutenfree)
  • 2 teaspoons extra virgin olive oil (optional)
  • 2-3 tablespoons vegan mozzarella (shredded, optional)
  • Vegan Parmesan or vegan mozzarella for topping

Instructions

  1. Prepare the Baking Dish: Grease an 8×8 inch or 9×9 inch baking dish or line it with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine all the dry ingredients including oats, almond flour, baking powder, chia seeds, salt, black pepper, garlic powder, dried thyme, sun-dried tomato, and nutritional yeast if using. Stir well to evenly distribute everything.
  3. Add Vegetables and Herbs: Mix in the chopped bell pepper, fresh basil, and green onions until well combined within the dry mixture.
  4. Add Wet Ingredients: Pour in the broth or water (or marinara and water mixture), soy sauce, and extra virgin olive oil if using. Stir thoroughly until all oats are hydrated and the mixture is uniform. Level the mixture evenly in the prepared baking dish using a spatula.
  5. Add Toppings: Sprinkle vegan parmesan or shredded vegan mozzarella on top, then arrange a layer of sliced tomatoes over the cheese.
  6. Bake: Preheat your oven to 350°F (180°C). Bake the oatmeal bake in the oven for 30-35 minutes. To check doneness, insert a toothpick or fork in the center; it should not be too soft or sticky.
  7. Rest and Garnish: Remove the dish from the oven and let it sit for 10 minutes. Garnish with additional green onions or fresh basil.
  8. Cool and Slice: Allow the bake to cool for another 5-10 minutes to firm up, making it easier to slice. Don’t worry if the slices are not perfectly formed; the flavor remains excellent.
  9. Serve: Serve warm as a breakfast bake, either plain or with a side of chopped tomato or marinara sauce for added flavor.

Notes

  • For a nut-free version, replace almond flour with additional oats.
  • Using nutritional yeast adds a cheesy flavor but is optional.
  • You can substitute soy sauce with tamari to make it gluten-free.
  • Extra virgin olive oil is optional but adds richness.
  • If vegan mozzarella is unavailable, omit or use another vegan cheese alternative.
  • This dish keeps well for leftovers and can be reheated gently.
