Salmon Crudo is a fresh and vibrant Italian-inspired raw fish dish featuring thinly sliced sashimi-grade salmon dressed with a zesty citrus and soy dressing. Enhanced with hints of chili, red onion, and fresh herbs like basil, this elegant appetizer is light, flavorful, and perfect for a quick yet impressive starter in just 20 minutes.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Salmon and Produce

  • 7-8 oz raw salmon (sashimi-grade, thinly sliced, about 200-220 grams)
  • ½ red onion (finely diced)
  • ½ red chili (thinly sliced, such as Serrano or Jalapeno, mild)
  • ½ avocado (thinly sliced)
  • A few basil leaves (sliced, or substitute cilantro or dill)

Dressing

  • 1 teaspoon citrus zest (orange, lemon, lime)
  • 1 tablespoon orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil (plus extra for drizzling)
  • 2 teaspoons light soy sauce
  • 1 teaspoon sugar
  • ¼ teaspoon salt (plus flaky salt for finishing)

Instructions

  1. Freeze the salmon. Place the sashimi-grade salmon fillet in a sealed bag or container and freeze it for 30 to 60 minutes until it becomes firm, making it easier to slice thinly.
  2. Make the dressing. In a small bowl, combine the citrus zest, freshly squeezed orange, lemon, and lime juices, olive oil, light soy sauce, sugar, salt, and finely diced red onion. Stir well to blend the flavors and let the dressing sit to meld.
  3. Slice everything. Remove salmon from the freezer and use a sharp knife to thinly slice the firm salmon. Also, thinly slice the avocado and red chili pepper.
  4. Assemble the dish. Spread some of the prepared dressing on the serving plate as a base. Neatly arrange the thin salmon slices and avocado on top of the dressing.
  5. Finish and serve. Drizzle additional dressing over the arranged ingredients. Sprinkle the sliced chili, fresh basil leaves, and a pinch of flaky salt on top for texture and flavor. Add a final drizzle of olive oil. Serve immediately alongside toasted bread or crackers if desired.

Notes

  • Use sashimi-grade salmon to ensure freshness and safety when eating raw fish.
  • Freezing the salmon briefly firms it up, making thin slicing easier and more precise.
  • Adjust chili quantity to taste depending on preferred spice level.
  • Fresh herbs like cilantro or dill can be used as alternatives to basil for different flavor profiles.
  • Serve immediately after assembling to enjoy the freshest flavors and avoid avocado browning.
  • Pair this dish with crisp white wine or sparkling water with lemon for a refreshing meal experience.
