- 1 3/4 cups chopped dark chocolate

Instructions
- Melt the First Portion of Chocolate: Add 1 cup of chopped dark chocolate to a pot on the stove set to low heat. Stir constantly until the chocolate is fully melted, then remove the pot from the heat.
- Mix the Rose Flavor: Transfer the melted chocolate to a bowl, then add rose water and olive oil. Stir the mixture thoroughly until smooth and well combined.
- Chill the Mixture: Place the chocolate rose water mixture in the fridge for about 30 minutes, or until firm enough to shape.
- Form the Truffle Centers: Using 2 teaspoons of the chilled mixture each time, form small balls with your hands. Wearing kitchen gloves is recommended to keep the process clean. Place the balls on a parchment-lined or silicone mat on a plate. You should have about 12 balls.
- Melt the Remaining Chocolate: Add the remaining 3/4 cup of dark chocolate to a pot on low heat. Stir continuously until melted, then remove from heat and pour into a bowl.
- Coat the Truffles: Dip each chocolate ball into the melted chocolate using a spoon to coat it entirely. Use two forks to lift the truffle out, allowing excess chocolate to drip back into the bowl, then place the coated truffle onto the parchment-lined plate.
- Garnish with Rose Petals: Sprinkle dried rose petals atop each coated truffle while the chocolate is still wet.
- Set the Truffles: Refrigerate the plate of truffles for at least one hour to harden. Before serving, leave the truffles at room temperature for about 30 minutes for optimal texture and flavor.
