Ingredients
Squash
- 1 lb. yellow summer squash (about 2 medium), cut into ½-inch rounds
Seasoning
- 1 tablespoon olive oil
- Kosher salt, to taste
- Ground black pepper, to taste
Topping
- 3 tablespoons grated Parmesan cheese
Optional Garnish
- Chopped fresh herbs such as parsley, thyme, or basil
Instructions
- Prep the squash: Preheat your oven to 400°F. Place the yellow squash rounds in a large bowl, drizzle them evenly with olive oil, then season generously with kosher salt and ground black pepper. Toss everything thoroughly to make sure the squash is well coated.
- Arrange and top: Spread the coated squash in a single layer on a rimmed baking sheet. Sprinkle the grated Parmesan cheese evenly over the top of the squash rounds to prepare for roasting.
- Roast the squash: Bake the squash in the preheated oven for 12 to 14 minutes. The squash should become fork-tender while maintaining its shape, and the cheese will begin to melt.
- Broil for crispiness: Move the baking sheet to the broiler and broil the squash for 1 to 2 minutes. Keep a close eye to ensure the cheese becomes crispy and golden brown without burning.
- Garnish and serve: Remove the squash from the oven, top with chopped fresh herbs if desired, and add an extra pinch of salt and pepper to taste. Serve immediately to enjoy the contrast of tender squash and crispy cheesy topping.
Notes
- Keep a close eye during the broiling step, as the cheese can burn quickly.
- To add extra flavor, try sprinkling a little garlic powder or red pepper flakes before roasting.
- This dish pairs wonderfully with grilled meats or as part of a vegetarian meal.
- Use a rimmed baking sheet to catch any cheese or oil drippings for easy cleanup.
- Fresh herbs like basil or thyme add a nice aromatic finish but can be omitted if unavailable.
