Instructions
- Combine Ingredients: In a medium mixing bowl, add 1 cup whole milk ricotta, 1 to 2 teaspoons honey, the zest of ½ lemon, and 1 pinch flaky salt. Stir gently until ingredients are roughly combined.
- Whip the Mixture: Using a hand mixer on medium speed or whisking vigorously by hand, beat the mixture for 60 to 90 seconds. Scrape down the sides of the bowl once halfway through to ensure even whipping. The dip should become light, fluffy, and creamy.
- Arrange the Dip: Spread the whipped ricotta into a shallow serving dish. Use the back of a spoon to create a gentle swirl pattern on the surface of the dip for an appealing presentation.
- Add Olive Oil and Garnishes: Drizzle 1 teaspoon olive oil evenly over the top of the dip. Add any desired garnishes such as extra honey, more lemon zest, cracked black pepper, chopped pistachios, fresh thyme, or red pepper flakes to enhance flavor and visual appeal.
- Serve: Serve the dip immediately with toasted baguette slices for an elegant appetizer experience.
Notes
- Make it Ahead: Whip the ricotta base up to 24 hours in advance and store it in an airtight container in the refrigerator. Add olive oil, honey, and garnishes just before serving. Let the dip sit at room temperature for 10 minutes before serving for best texture.
- Storage: Store leftover dip without garnishes in an airtight container in the refrigerator for up to 4 days. Stir well before serving. Do not freeze.
- Honey Tip: Start with 1 teaspoon of honey mixed in, taste after whipping, and then add more to preference. Reserve extra honey for drizzling on top.
- Drain Ricotta if Needed: If the ricotta seems watery, place it in a fine mesh strainer over a bowl and drain for 10 to 15 minutes before using for the best creamy texture.
- Toasting Baguette Slices: Slice baguette into ½ inch thick slices. Brush lightly with olive oil. Toast in a 400°F oven for 5-7 minutes per side until golden and serve warm.
