Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line 24 muffin cups with liners to prepare them for baking.
- Mix Wet Ingredients: In a large bowl, combine the sugar, brown sugar, vegetable oil, buttermilk, egg, and vanilla extract. Stir well until the mixture is smooth and homogenous.

- Incorporate Rhubarb: Fold in the diced rhubarb carefully to evenly distribute it throughout the batter without breaking the fruit down too much.
- Prepare the Topping: In a small bowl, mix together the sugar, cinnamon, and softened butter using a fork until the mixture forms a crumbly topping.
- Fill Muffin Cups: Spoon the batter into the prepared muffin liners, filling each about two-thirds full. Sprinkle approximately 1 teaspoon of the cinnamon sugar topping on each muffin.
- Bake: Bake the muffins in the preheated oven for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Allow the muffins to cool in the pan for 15 minutes before transferring them to a wire rack to cool completely.
