Ingredients
Filling
- 6 cups sliced rhubarb (1/2″ pieces)
- 3/4 cup granulated sugar
- 3 tablespoons cornstarch
- 1 tablespoon orange juice
- 1 teaspoon orange zest
- 1/2 teaspoon Kosher salt
Topping
- 1/2 cup all-purpose flour
- 1/2 cup old-fashioned rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 6 tablespoons cold butter, cubed
Instructions
- Preheat Oven: Heat the oven to 375 degrees Fahrenheit and lightly grease an 11.5 inch deep dish pie pan or a suitable baking dish with butter to prepare for baking.
- Make Filling: In a large bowl, combine the sliced rhubarb with granulated sugar, cornstarch, orange juice, orange zest, and salt. Mix thoroughly until the rhubarb is evenly coated with the sugar mixture. Pour this filling mixture into the greased pie dish and spread it out evenly.
- Make Topping: In another large bowl, mix together the flour, rolled oats, brown sugar, salt, cinnamon, and ginger. Add the cold cubed butter and gently cut it into the dry ingredients using your fingers, a fork, or a pastry cutter until the mixture forms pea-sized butter pieces and combines well. The topping should be crumbly but hold together when squeezed.
- Top and Bake: Evenly spread the topping mixture over the rhubarb filling in the baking dish. Place in the preheated oven and bake for 30 to 35 minutes, or until the edges are bubbling and the topping is a deep golden brown.
- Rest and Serve: Remove from the oven and allow the crisp to cool for 10 minutes to thicken the filling. Serve warm with vanilla ice cream for a luscious dessert experience.
