Delicious Red Velvet Cheesecake Bites that combine the rich flavor of red velvet cake with creamy cheesecake in bite-sized treats. Perfect as a sweet snack or dessert, these no-bake cheesecake balls are coated with cake crumbs for added texture and flavor.

  • Total Time: 1 hour 15 minutes
  • Yield: 16 servings

Ingredients

Cake

  • 1 box red velvet cake mix
  • Ingredients as directed on cake mix packaging (usually eggs, oil, water)

Cheesecake Mixture

  • 16 ounces cream cheese, room temperature
  • 4 tablespoons butter, room temperature
  • 1/2 cup powdered sugar
  • 2 cups graham crackers, crushed
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pans: Preheat the oven to 350°F and line or grease 2 8-inch cake pans to prevent sticking.
  2. Bake the Cake: Prepare the red velvet cake according to the package instructions. Pour the batter into the pans, bake as directed, and let the cakes cool completely.
  3. Prepare Cake Crumbs: Once cooled, crumble the cake by hand until it resembles coarse sand. If the cake is still too moist, break it into smaller chunks, spread them on a lined baking sheet, and dry in the oven at 350°F for 5-6 minutes.
  4. Cream the Cheesecake Mixture: In a large mixing bowl, combine cream cheese, butter, and powdered sugar. Using an electric mixer, beat until the mixture is fluffy and aerated.
  5. Add Graham Crackers and Vanilla: Crush the graham crackers finely by placing them in a ziplock bag and rolling a pin over them. Add the crushed graham crackers and vanilla extract into the cream cheese mixture and mix thoroughly until fully incorporated.
  6. Form Cheesecake Bites: Using a 2 teaspoon cookie scoop, scoop out portions of the cream cheese mixture. Roll each portion with your hands into smooth, round balls and place them on a lined baking sheet or plate. Refrigerate for 1 hour to firm up.
  7. Coat with Cake Crumbs: After chilling, roll each cream cheese ball in the prepared red velvet cake crumbs until fully coated. Use your hands to reshape and make them perfectly round if needed.
  8. Serve or Store: Enjoy the cheesecake bites immediately or store them refrigerated until ready to serve.

Notes

  • Make sure the cream cheese and butter are at room temperature to ensure a smooth, fluffy mixture.
  • If the cake crumbs are too moist, drying them in the oven helps improve coating consistency.
  • Store the cheesecake bites in the refrigerator and consume within 3-4 days for best freshness.
  • These bites can be frozen for up to 1 month; thaw in the refrigerator before serving.
  • Use a cookie scoop for uniform bite sizes and easier rolling.
