Instructions

  1. Heat Cream Mixture: Combine the sugar, heavy cream, sea salt, and lemon zest in a medium saucepan. Cook over medium heat, stirring occasionally, until the mixture comes to a gentle, bubbling simmer.
  2. Simmer Cream: Allow the cream mixture to simmer gently for 5 minutes, stirring occasionally to prevent it from scorching. The mixture will turn a deeper yellow color as it thickens.
  3. Add and Cook Raspberries: Stir in the raspberries and bring the mixture back to a simmer. Continue simmering for another 5 minutes, stirring and gently mashing the raspberries with a spatula. The mixture should thicken slightly.
