Instructions
- Preheat and Prepare Pan: Preheat the oven to 350° F. Spray an 8×8 baking pan with non-stick spray or line it with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the old-fashioned oats, Dutch processed cocoa powder, baking powder, and salt ensuring an even distribution of ingredients.
- Combine Wet Ingredients: Pour in the milk, maple syrup, eggs, melted coconut oil (or butter), and pure vanilla extract into the dry mixture. Mix thoroughly until the batter becomes smooth and fully combined without any dry patches.
- Add Chocolate Chips: Gently fold in the ½ cup of chocolate chips with a rubber spatula to incorporate them evenly throughout the batter.
- Bake: Pour the oat mixture into the prepared baking pan and sprinkle additional chocolate chips on top for extra richness. Bake in the preheated oven for 30 to 40 minutes or until the center is set and a toothpick inserted comes out mostly clean.
- Cool and Garnish: Allow the baked oats to cool in the pan for several minutes to set further. Optionally, melt extra chocolate chips or chopped chocolate and drizzle over the top, then finish with a sprinkle of flaky sea salt for contrast before serving.

- Use old-fashioned oats for the best texture; quick oats may result in a mushier bake.
- Coconut oil or butter can be used interchangeably depending on preference or dietary needs.
