Ingredients
Pudding Base
- 1/3 cup chia seeds
- 2 Tablespoons hemp seeds
- 3/4-1 cup milk (dairy or plant-based, depending on desired pudding thickness)
- 1/2 cup vanilla Greek yogurt
- 3/4 cup pumpkin puree
- 2 teaspoons pumpkin spice
- 2 teaspoons vanilla extract
- 2 Tablespoons maple syrup
Topping
- 1 Tablespoon white chocolate chips
- 1/2 teaspoon coconut oil
- 1/4 cup vanilla Greek yogurt (or coconut yogurt for dairy-free)
- 1/4 teaspoon cinnamon
Instructions
- Mix Pudding Ingredients: In a large bowl, thoroughly combine the chia seeds, hemp seeds, milk, vanilla Greek yogurt, pumpkin puree, pumpkin spice, vanilla extract, and maple syrup until evenly mixed.
- Divide the Mixture: Pour the pudding mixture evenly into two jars or bowls, ensuring equal portions.
- Melt White Chocolate: Place the white chocolate chips and coconut oil in a microwave-safe bowl and heat in 30-second intervals, stirring after each until the mixture is smooth and fully melted.
- Combine Topping: Gradually whisk the vanilla Greek yogurt (or coconut yogurt) into the melted white chocolate mixture, adding one tablespoon at a time to achieve a smooth, creamy topping.
- Top Jars: Spread the white chocolate-yogurt topping evenly over each pudding portion and lightly sprinkle with additional pumpkin spice or ground cinnamon for extra flavor.
- Cover and Chill: Seal the jars or bowls with airtight lids and refrigerate overnight (about 8 hours) to allow the chia seeds to absorb the liquid and the flavors to meld. Serve chilled.
Notes
- You can adjust the milk quantity to achieve your preferred pudding thickness; use less milk for a thicker pudding.
- Substitute vanilla Greek yogurt with coconut yogurt for a dairy-free or vegan version.
- To melt white chocolate without a microwave, use a double boiler on the stovetop, stirring continuously.
- Make sure to refrigerate the pudding for at least 6-8 hours or overnight for optimal texture.
- Maple syrup can be replaced with honey or agave syrup if preferred.
