Ingredients

Peach Chia Base

  • 1 ½ cups diced peaches (fresh or frozen)
  • 2 tsp maple syrup or honey (for cooking peaches)
  • Pinch of salt
  • 3/4 cup milk of choice
  • 2 tbsp honey (adjust to taste)
  • 1 tbsp vanilla bean paste (or 2 tsp vanilla extract)
  • 1 tsp lemon juice
  • 1 cup plain Greek yogurt (0% fat, such as Fage)
  • 1/2 cup chia seeds

Peach Layers

  • 1 cup diced peaches
  • 2 tsp maple syrup or honey
  • Pinch of salt
  • Squeeze of lemon juice

Instructions

  1. Cook down the peaches: Add diced peaches, maple syrup, and a pinch of salt to a small pan over medium heat. Cook for 5–7 minutes, stirring occasionally, until the peaches become very soft, slightly thick, and jammy with reduced liquid. Allow to cool slightly.
  2. Make the peach milk: Transfer the cooked peaches to a blender. Add milk, honey, vanilla bean paste, and lemon juice. Blend until completely smooth and creamy.
  3. Mix the base: In a large bowl, add the Greek yogurt. Pour in the peach milk and mix until fully combined and smooth. Stir in the chia seeds last and mix well. Let sit for 5 minutes, then stir again to prevent chia clumping.
  4. Chill: Refrigerate the mixture for at least 2–4 hours or overnight until it becomes thick, creamy, and scoopable.
  5. Optional Peach Layers: In the same pan, add the second batch of peaches with maple syrup and salt. Cook for 5–7 minutes until thick, glossy, and jam-like. Let cool.
  6. Assemble jars: Add a layer of chia pudding, spoon over the jammy peaches, add another layer of chia pudding, and finish with more jammy peaches on top. Optionally, finish with a dollop of Greek yogurt and a mint leaf for garnish to elevate the presentation.

Notes

  • Fresh or frozen peaches both work well; adjust sweetness depending on the natural sweetness of your peaches.
  • The chia pudding is delicious on its own, but the jammy peach layers add a wonderful depth of flavor.
  • If the chia pudding is too thick after chilling, add a splash of milk and stir to loosen.
