Ingredients
Peach Syrup
- 1 pound ripe peaches (about 3 medium)
- 1/2 cup honey
- 1 cup filtered water
Tea
- 8 cups filtered water (divided)
- 8 black tea bags
Garnish and Mix-ins
- 1 large lemon, sliced into rounds
- 1/2 cup packed fresh mint leaves, plus more to serve
- Remaining peach slices (from the 1 peach reserved)
Instructions
- Make the peach syrup: Finely dice 2 of the peaches and combine them with honey and 1 cup of filtered water in a small saucepan. Bring the mixture to a boil while stirring to dissolve the honey and crush the peaches against the pot sides. Reduce heat and simmer for 5 minutes to infuse the flavor and color of the peaches into the syrup. Remove from heat and allow it to cool to room temperature. Strain the syrup through a fine mesh to remove solids.
- Make the tea: Bring 4 cups of filtered water to a boil in a kettle or saucepan. Remove from heat, add the 8 black tea bags, cover, and steep for 8 minutes until dark amber. Discard the tea bags and let the tea cool to room temperature.
- Mix and chill: In a large pitcher, combine the strained peach syrup, cooled tea, and the remaining 3 cups of filtered water. Slice the remaining peach into thin wedges and add them along with lemon slices and fresh mint leaves to the pitcher. Refrigerate for at least 4 hours or overnight to allow the flavors to meld.
- Garnish and serve: Fill glasses with ice, pour the peach iced tea over the ice, and garnish with reserved lemon rounds and fresh mint leaves. Serve chilled for a refreshing drink.
