A delicious and easy-to-make Peach Chicken with Balsamic Vinegar featuring tender chicken breasts simmered with ripe peaches, tomatoes, and fresh basil for a flavorful and slightly sweet savory dish perfect for any weeknight dinner.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Chicken and Seasoning

  • 2 Tbsp olive oil
  • 1/2 medium yellow onion, sliced (about 3/4 cup)
  • 4 (5 oz) boneless skinless chicken breasts or 1 1/4 lbs chicken breast tenderloins
  • Salt and freshly ground black pepper, to taste
  • 2 cloves garlic, minced

Sauce and Toppings

  • 1/3 cup balsamic vinegar
  • 1 Tbsp honey
  • 2 cups sliced firm but ripe peaches (about 2 medium peaches)
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1/4 cup thinly sliced fresh basil

Instructions

  1. Heat oil and sauté onion: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the sliced onion and sauté for about 3 minutes until softened, then push the onions to the side of the skillet.
  2. Cook chicken breasts: Add the chicken breasts to the skillet, season with salt and freshly ground black pepper. Cook until the chicken is golden brown on each side, about 2 1/2 minutes per side.
  3. Remove chicken and sauté garlic: Transfer the cooked chicken to a plate, leaving the oil and onions in the skillet. If needed, add an additional 1/2 tablespoon of olive oil. Add the minced garlic to the skillet and sauté for 20 seconds until fragrant.
  4. Make balsamic reduction and add fruits: Pour in the balsamic vinegar and cook while stirring until it has reduced by half, approximately 1 minute. Stir in the honey, then add the sliced peaches and drained diced tomatoes. Toss gently to combine and season lightly with salt and pepper.
  5. Simmer chicken with sauce: Return the chicken breasts to the skillet, nestling them between the peaches and tomatoes. Cover the skillet with a lid, reduce heat to medium-low, and simmer until the chicken is fully cooked and registers 165°F on an instant-read thermometer, about 6 to 9 minutes.
  6. Garnish and serve: Remove the skillet from heat, top with thinly sliced fresh basil, and serve the dish warm.

Notes

  • Use firm yet ripe peaches to ensure they hold their shape during cooking.
  • If fresh peaches are not available, thawed frozen peaches can be used as a substitute.
  • Use a meat thermometer to ensure the chicken is safely cooked through to 165°F.
  • Adjust honey quantity based on sweetness of peaches or personal preference.
  • Serve with rice, quinoa, or crusty bread to soak up the flavorful sauce.
