Ingredients
Sausage and Sauce
- 1 pound regular or Italian sausage (Jennie-O Italian Style Turkey Sausage preferred)
- 1/2 onion, diced
- 1 clove garlic, minced
- 2 cups chicken broth
- 2 tablespoons cornstarch
- 1 (15 oz.) can fire roasted diced tomatoes
- 1 cup freshly grated Parmesan cheese
- 1 cup fresh basil, snipped into little pieces
Pasta
- 1/2 pound dry spaghetti (or your favorite pasta)
- Salt (for pasta water, to taste)
Instructions
- Cook Sausage and Onion: In a large pot over medium to high heat, cook the sausage and diced onion together, stirring frequently until the onion is soft and the sausage is fully browned and crumbled.
- Add Garlic: Add the minced garlic to the pot and cook on low heat for 1-2 minutes, being careful not to burn the garlic, to enhance the flavor base of the sauce.
- Prepare Thickener and Add Broth: In a glass measuring cup, mix the cornstarch thoroughly into the chicken broth until fully dissolved. Pour this mixture into the pot with the sausage and onion, then cook over medium-high heat, stirring constantly until the sauce thickens slightly.
- Add Tomatoes and Simmer: Stir in the fire roasted diced tomatoes and combine well with the sauce, allowing the flavors to meld.
- Incorporate Cheese and Basil: Add the freshly grated Parmesan cheese and chopped fresh basil to the sauce, stirring until everything is evenly mixed and the cheese begins to melt.
- Cook Pasta: Meanwhile, bring a large pot of water to a boil. Add a generous pinch of salt and the dry spaghetti. Cook until al dente according to package instructions, then drain most of the water but leave a small amount to help the sauce adhere to the pasta.
- Combine Pasta and Sauce: Add the cooked pasta to the pot with the sausage and tomato sauce, mixing well to combine and coat the pasta completely.
- Serve: Garnish with extra fresh basil and Parmesan cheese if desired. Serve warm and enjoy your delicious meal!
Notes
- Be careful when cooking garlic to avoid burning, as it can turn bitter.
- You can substitute the sausage with a plant-based sausage to make a vegetarian version, but the flavor will differ slightly.
- Using fire roasted tomatoes gives a smoky depth to the sauce that fresh tomatoes alone don’t provide.
- Reserve some pasta water before draining to adjust sauce consistency if needed.
