Ingredients
Liquid Ingredients
- 1 ½ cups water
- 1 cup white grape juice
- ½ cup Pineapple Passionfruit Refresher Base (homemade as per recipe)
- ½ cup sweetened coconut milk
- ice as needed
Fruit and Sweeteners
- 1 ½ cups fresh or frozen pineapple chunks
- ⅓ cup granulated sugar
- 1 tbsp freeze-dried pineapple pieces (for garnish)
Flavorings and Additives
- 1 tbsp passionfruit powder
- ½ tsp citric acid
Instructions
- Simmer Pineapple Mixture: Combine the water, white grape juice, pineapple chunks, and granulated sugar in a medium saucepan. Stir the mixture and bring it to a simmer over medium heat. Allow it to gently simmer for 10 minutes to infuse the flavors and dissolve the sugar fully.
- Strain Pineapple Liquid: After simmering, strain the mixture through a fine sieve or strainer, pressing the pineapple chunks to extract as much liquid as possible. Discard the pineapple solids and return the strained liquid to the saucepan.
- Add Passionfruit and Citric Acid: Heat the pineapple liquid over low heat and whisk in the passionfruit powder and citric acid. Continue whisking until these ingredients are fully dissolved and evenly incorporated, creating the Pineapple Passionfruit Refresher base.
- Cool the Base: Remove the saucepan from heat and transfer the liquid to a large jar or container. Let it cool completely before using to ensure the flavors meld well and it’s safe to combine with other cold ingredients.
- Prepare the Drink: In a cocktail shaker or a large jar with a tight-fitting lid, add ½ cup of the cooled Pineapple Passionfruit Refresher base and ½ cup of sweetened coconut milk. Shake vigorously a few times until thoroughly mixed and frothy.
- Serve: Fill a tall glass with ice and pour the shaken paradise drink over it. Garnish with freeze-dried pineapple pieces on top to add a fruity aroma and decorative touch. Enjoy your refreshing tropical beverage immediately.
