Instructions
- Heat the Olive Oil and Cook Leeks: Heat 3 tablespoons of olive oil over medium heat in a 12-inch skillet. Add the finely chopped leeks and cook for 5 to 7 minutes, stirring frequently, until softened. Season with a pinch of salt to enhance the flavor.
- Add Garlic: Add the finely chopped garlic cloves and cook, stirring for 1 minute, until the garlic releases its aroma, infusing the base with flavor.
- Incorporate Cream and Broth: Stir in the coconut cream and bone broth, allowing the mixture to warm gently for about 30 seconds to combine the flavors.
- Prepare and Season the Fish: Arrange the thoroughly dried cod fillets snugly in the skillet on top of the creamy leeks mixture. Season the fish with the remaining 1 teaspoon of sea salt and the curry powder. Pour over the fresh lemon juice and place lemon rinds on top of the fillets to add a bright citrus note.
- Simmer the Fish: Cover the skillet and let it simmer on medium-low heat for 10 minutes, or until the cod is opaque and flakes easily with a fork. Cooking time may vary depending on fillet thickness, so check for doneness. Garnish with fresh parsley if desired before serving.
