This one-dish blueberry baked oats recipe is a simple, cozy, and wholesome breakfast option inspired by blueberry muffins. It combines gluten-free rolled oats with fresh blueberries and warming spices, then bakes everything together in a single dish for easy cleanup. Perfect for meal prep, this vegan and gluten-free baked oatmeal comes together in under 5 minutes of hands-on time and delivers a comforting, hearty breakfast that can be enjoyed warm or cold.

  • Total Time: 45 minutes
  • Yield: 6-8 servings

Ingredients

Dry Ingredients

  • 2 cups gluten-free rolled oats (or regular rolled oats if not gluten-free)
  • ¼ cup ground flaxseed
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon

Wet Ingredients

  • 1 ½ cups unsweetened plain almond milk (or any non-dairy milk)
  • 3 tablespoons pure maple syrup

Fruit & Toppings

  • 1 cup fresh blueberries, plus more for topping
  • Almond butter, for serving (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F if using a ceramic-coated baking dish like Caraway, or 375°F if using another type of baking dish. Avoid glass baking dishes for this recipe due to their heat conducting properties.
  2. Mix Dry Ingredients: In an 8.5 x 6-inch (6.6-cup) oven-safe baking dish, combine the rolled oats, ground flaxseed, salt, baking powder, and cinnamon. Stir thoroughly to evenly distribute the ingredients.
  3. Add Wet Ingredients: Pour in the almond milk and maple syrup directly into the baking dish with the dry ingredients. Mix gently but thoroughly until everything is combined into a cohesive batter.
  4. Fold in Blueberries: Carefully fold in 1 cup of fresh blueberries, then top the mixture with additional blueberries for garnish and extra flavor.
  5. Bake: Place the baking dish into the preheated oven and bake for 40 minutes, allowing the oats to cook through and the top to set.
  6. Cool and Serve: Remove the dish from the oven and let it cool completely to allow the baked oats to firm up for clean slicing. Cut into 8 smaller squares or 6 larger servings. Optionally, serve with a drizzle of almond butter for added richness.

Notes

  • Allow the baked oats to cool completely before slicing to ensure neat, clean pieces.
  • Both fresh and frozen blueberries can be used; frozen blueberries will slightly color the oats purple-blue but won’t affect taste or texture.
  • Store leftovers covered in the refrigerator, preferably in the same oven-safe baking dish if it can be used for storage.
  • Using a different size or type of baking dish may affect the thickness of the oats layer and alter baking time.
  • The recipe was tested specifically in a ceramic-coated Caraway baking dish, which provides even heat distribution.
