Crust

Instructions

- Crush the Cookies: Using a food processor or a large Ziplock bag, crush the frosted animal cookies until they form a fine powder.
- Make the Crust: Stir the crushed cookies together with melted butter and granulated sugar until the mixture resembles a dough. Press this mixture firmly into the bottom of the prepared pan, ensuring it covers every corner evenly. Place the crust in the refrigerator to set while you prepare the filling.
- Beat Cream Cheese Mixture: In the bowl of a stand mixer fitted with the paddle attachment, beat the room temperature cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Melt Candy: In a small microwave-safe bowl, melt the pink candy melts according to package instructions, heating in short bursts to avoid burning.
- Combine Filling: With the mixer on low speed, gradually pour in the melted pink candy melts into the cream cheese mixture. Add pink food coloring if you want a deeper pink hue. Mix until everything is well combined and smooth.
- Assemble Cheesecake: Pour the filling over the prepared cookie crust in the pan, spreading evenly to cover the entire surface.
- Chill and Set: Place the assembled cheesecake in the refrigerator and chill for 2-3 hours or until fully set.
- Add Toppings and Serve: Once set, top the cheesecake with rainbow sprinkles and additional frosted animal cookies or circus cookies if desired. Cut into squares and serve chilled.
