Mushrooms and Vegetables
- 8 oz mushrooms (such as cremini, shiitake, or wild mushroom mix)
- 2 scallions (green onions)
Pasta and Sauce
- 6 oz dried bucatini (or linguine, spaghetti)
- 3 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons white miso
- 2 teaspoons sriracha
- ¼ cup finely grated Parmesan cheese (plus extra for garnish)
- Black pepper, to taste
Instructions
- Prep veggies: Rinse 8 oz mushrooms under cold water (no need to pat dry). Slice mushrooms. Thinly slice the white and light green parts of 2 scallions for cooking, and mince the dark green parts for finishing.
- Cook pasta: Bring a large pot of salted water to a boil. Add 6 oz dried bucatini and cook until al dente according to package instructions. Scoop out 1 cup of pasta cooking water and set aside, then drain the noodles.
- Sear mushrooms: Heat a large dry skillet over medium-high heat until water flicks bounce. Add mushrooms and cook, stirring infrequently, until the water evaporates and mushrooms brown on both sides, about 5 to 8 minutes. Reduce heat to low and cook another minute as skillet cools slightly.
- Build sauce: Push mushrooms to skillet edges. In the center, add 3 tablespoons butter, 2 cloves minced garlic, and the white/light green scallions. Cook until fragrant, about 1 minute. Stir to coat mushrooms in butter and cook, stirring frequently, until garlic is pale golden, 2 to 3 minutes. Add 2 tablespoons white miso, 2 teaspoons sriracha, and ⅔ cup reserved pasta water. Whisk to create a smooth sauce.
- Finish: Add cooked pasta to skillet and toss to coat in sauce. Mix in ¼ cup finely grated Parmesan and minced dark green scallions. Toss again, adding additional pasta water if needed for a silky sauce. Season with black pepper and garnish with extra Parmesan cheese to taste.

- Rinsing mushrooms with water helps clean them and adds moisture that evaporates during cooking for perfect browning.
- Butter adds richness to the sauce but can be substituted with olive oil for a lighter version.
